Crostata: Your Smart Sweet Snack

Crostata: Your Smart Sweet Snack

Hailed from Italy, Crostata is a crusty pastry that anyone would enjoy. It’s effortless to make and preferable when serving a huge crowd. You will only need crust and a good filling.

What’s also nice about this pie is that it’s versatile. You can choose whether it can be bite sized or huge. And you can also experiment with the fillings. It can be sweet from fruits fillings or it can be savory from meat or vegetables. Either way, it’s still delish!

How easy it is to make Crostata? You will only do 4 simple steps! Know how to make this heavenly pie in a jiffy. This recipe works if you’re planning to host a large Holiday party. Kelli and Merri Ann of The Prepared Pantry used this recipe to serve a huge crowd and it turned out to be a great hit!

Step 1.  Add the water and Mix the dough

Follow the directions on the bag.  Add water and mix for one minute.

Step 2. Roll and cut the dough

Roll the dough to 1/4 inch thick and cut six inch rounds.

Step 3. Add the filling and fold

Put three tablespoons of filling* in the center of each round.  Fold the dough over the filling and pinch the side folds together so that it holds its shape.

Step 4. Bake

Bake for 15 minutes at 425 degrees until lightly browned.

Take note that for the filling, you can use the canned fillings to save more time.

Isn’t it exciting? Lastly, it’s a must for you to know how to make the original Crostata recipe.

What you’ll be needing..

  • 3 tablespoons apple pie filling for each crostata
  • Pie dough
  • Caramel topping

Preheat the oven to 425 degrees.

  1. Roll the dough to slightly less than 1/4-inch thick.
  2. Using a dough press or other round cutter, cut out 6-inch rounds
  3. Place three tablespoons of apple filling in the center of each round.
  4. Fold the dough over the filling, leaving the center open one inch or so, squeezing the folds together as you go. It does not need to be uniform. The folds will hold together better if you rub a damp towel over the creases to pick up any flour so that the dough sticks together better.
  5. Place each dessert on a parchment lined baking sheet. Bake for 15 minutes or until the crust begins to brown. Remove them to a rack while still hot.
  6. Serve warm.

If you choose to make these with fresh apples, for each four crostatas use:

  • 2 cups thinly sliced and peeled tart apples
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon cinnamon
  • Pie dough
  • Caramel topping

Bake until the crust is browned and the apples are tender.  It will probably take a few minutes longer with the raw apples.

How to Make a Caramel Sauce

  • 1 lb brown sugar
  • 1 cup (two sticks) butter
  • 1 14-ounce can sweetened condensed milk
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1 teaspoon butterscotch flavor
  1. Melt the butter in a heavy saucepan. Add the sweetened condensed milk and syrup. When the mixture is hot, add the sugar and salt and stir with wooden spoon until the sugar is dissolved.
  2. Wash the sides of the pan down with a soft spatula dipped in water until there is none of the mixture on the sides of the pan. This is to ensure that all of the sugar crystals are washed into the pan and dissolved. Check to make sure that there are no remaining sugar crystals by rubbing a little of the mixture between your thumb and forefinger. You should feel no gritty sugar.
  3. With no sugar crystals in your pan, turn up the heat and cook the mixture while stirring until the candy reaches 240 degrees as registered on a candy thermometer. Remove it from the heat and stir in the flavor.
  4. Best served while warm.

This festive season, our tables deserve to be filled with delightful and enticing sweets. Don’t have any idea yet? Why not try Rainbow cookies! These little treats have vibrant hues and irresistible sweetness that you must relish.

Creating rainbow cookies are fun and not stressful at all. You just need these basic techniques to start making them.

Step 1 Mix and color/flavor the dough

Make the dough.  Divide the dough into three or four equal parts and add flavor and color to each.

Step 2 Shape the dough

Roll each part into equal logs.  Use your hands and the counter to create square logs and flat logs.

Step 3 Create the patterns

Press the dough logs together into one log to form the patterns.  Refrigerate the log.

Step 4 Slice and bake

Slice horizontal into 1/4-inch slices and bake.

Of course, don’t limit yourself with the color and shapes. Experiment as much as you can and work your creativity.

Making the log seems to be a bit tricky, just remember to keep them uniform.

  1. If you have a kitchen scale, use it to divide the dough portions equally. Make a rough rope out of each.
  2. Roll each rope in wax paper. Roll the waxed paper covered logs on the counter to make smooth logs, stretching and compressing to get them all the same length. Stroking the logs with your hands helps to make them smooth.
  3. For square logs, press them flat on the counter, stroke with your fingers, and turn them and stroke some more. Similarly, make strips for striped cookies.

It’s easier to make the logs than it is to describe how to make them.  After the logs are made, press them together and refrigerate them until the dough is firm.  Cut 1/4 inch thick slices with a serrated knife.

Now that you know the skills to apply let’s start baking those rainbow cookies!

Ingredients:

  • 3-1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup butter
  • 1-1/3 cups sugar
  • 2 large eggs
  • 2 ounces unsweetened chocolate (optional)
  • flavors and extracts (your choice)
  • food color gels (your choice)

Directions

  1. In a medium bowl, whisk the flour, baking powder, and salt together.
  2. Cream the butter and sugar together. Add the eggs, one at a time, beating until smooth. Continue beating until the mixture is light and fluffy. Add the dry ingredients in two parts, mixing after each. Mix just until combined.
  3. Divide the dough into two, three, or four parts depending on how many different doughs you choose to make.

For the chocolate dough:

  1. For one half of the dough, melt two ounces of chocolate. For one fourth of the dough, melt one ounce of chocolate. While still warm, work the chocolate into the dough until uniform.

For flavored and colored dough:

  1. Add two or three drops of food color gel in each one-fourth or one-third part. Add 1 teaspoon vanilla, 1 teaspoon almond, 1/4 teaspoon peppermint, 1/2 teaspoon cherry, 1/2 teaspoon strawberry, or other extracts to the dough and mix in.
  2. Form the dough into cylinders, squares, or layers—a separate color or flavor for each. Refrigerate until firm.
  3. Cut the dough into 1/4-inch thick slices. To form the shapes, cut each colored cylinder separately but gently press the different colored discs together on the cookie sheet. Bake on ungreased cookies sheets at 350 degrees for 10-12 minutes or until the cookies are nearly firmed and very lightly browned. Do not over bake. Cool on wire racks.
